Interesting about the soy....I do believe soy is one of the biggest genetically modified foods out there right now...perhaps that is part of the equation of unhealthiness that soy can produce. A lot of "healthy" individuals drink soy, milk and eat a lot of soy based products....is soy really the great health food it's often hyped to be?

It looks like one of the reasons of this healthier diet is the lower fat content compared with other diets. And the fats they do get are the good omega-3 fats from the fish. Interesting. This would agree with what I recently read in Frederic Patenaude's 'Raw Secrets' (see http://www.fredericpatenaude.com/starterkit.html ). His message is that addition of some cooked foods to a raw diet may be better than uploading on nuts, seeds, oils and avocado's, even if they are considered the 'good fats'. This is also in line with the fact that these mentioned 'good fats' will actually give a very unfavorable omega-6/omega-3 ratio. Guess the Japanese diet is at least a lot better than the traditional Western diet.

I have added in Japanese food keeping it steamed vegetables, however, this is interesting as to the references of the health pros and cons regarding soy. Thanks for the insight!
